The nose of the Pax Rouge is appealing, with aromas of liquorice, caramel and prune
The attack is full, generous and soft. On the palate, there is lovely volume, silky tannins that are well wrapped, and a very pleasant sensation of softness.
The finish is elegant, lightly spiced (a hint of pepper) and has a beautiful persistence.

The essence of terroir
The wine is produced by Via Caritatis, a collaboration between the monks and nuns of the Abbaye Sainte-Madeleine du Barroux and winemakers from Mont Ventoux.
The estate benefits from a mountain terroir and a favourable microclimate (Provence sunshine, the mistral), and works its plots with great respect for nature.
